I am interested in seed saving, and in our native wild plants. The more I learn about them, the more I believe we should be incorporating them into our diet. I have started to see the plants that are viewed as invasive pests such as the dock, and the dandelion, as blessings. Bear with me. The dock is persistent and hard to get rid of, it is deep rooting and it produces an abundance of seed, so spreads very easily and isn’t popular with gardeners. But it is easy to find across the uk and like many of our native plants it is loaded with health benefits, including:
- it is highly sustainable, fiber-rich, and loaded with nutrients.
- it contains all nine essential amino acids.
- it is high in iron, vitamins A and C.
- it acts as a mild laxative and promotes a healthy digestive system.
- it can be used to treat anemia.
I am going to toast the seed and store it. The plant is related to the rhubarb so contains oxalic acid, so not something you should eat a lot of but I think this is something that I could benefit from if used sparingly and would treat as a supplement.
